Minestrone Soup

... a cooperative effort for a fine soup. 

From Natalie Thomson, Nana Goldberg and Hunt's recipes. 

Makes 16 Cups:

Heat 1/4 cup oil.
Add garlic clove, minced
2 cups chopped onion
1 cup chopped cellery
4 Tbs parsley

Stir in:
One 6-oz. Hunt's tomato paste
One 10.5 oz. can of beef broth (or consomme)
9 cups of water
1 cup coarsely chopped cabbage
2 carrots, thinly sliced
2 tsp salt
1/4 tsp pepper
1 lb. can kidney beans, drained.

Lower heat and cover.
Simmer one hour.

Add one sliced zucchini, Unpeeled
1 cup frozen or canned peas
1 cup Orzo (or other macaroni).

Cook 10-15 minutes.

Top individual servings with grated cheese.
