BBQ Chicken & Fiery Jim Beam Steak

... If you like 'um hot

Bob Ross

My brother sent me these. You can make as hot as you like.

Chicken BBQ Secrets

Don't even bother to try barbecuing chicken breasts. They end up dry and tasteless. Use thighs; they're tastier and have enough fat to be self-basting.

Create the sauce by bringing to a boil:
  • pint bottle of vinegar
  • large finely chopped onion.
Simmer until the onion is very soft.
  • Add a small box of dark brown sugar (2 cups) and cook until dissolved and smooth.
  • To this add a bottle of your favorite spicy bottled barbecue sauce.
    Finally, add the secret ingredients:
  • 1/2 cup Hoisin Sauce
  • 1 jar orange marmalade.
  • Add hot sauce to taste.
Don't add the sauce until the chicken is almost done.
Brush and turn a couple of times. The finished product should be a sticky mess

Fiery Jim Beam Steaks

  • 3 habanero peppers (orange in color)
  • 4 cloves of garlic
  • 2 cups Jim Beam Whiskey
  • 2 rib steaks (12-16 oz each)
  • 2 large tomatoes
  • 1 medium red onion
  • 1 cucumber
  • 2 tsp lime juice
Makin' it:
Mince and pummel the habanero peppers and garlic.
Combine with Jim Beam.
Marinate steaks overnight, making sure to flip occasionally.
While grilling steaks, periodically baste with the marinade.
Dice tomatoes, red onion and cucumber.
Combine with lime juice. Let sit two or more hours to let flavors blend.
Serve steaks with salsa.
