PREPARE AND SET ASIDE:
1 1/2 cups rhubarb, stripped of outer fibers and cut into 1" pieces. If the rhubarb stalks are very thick, cut the slices about 3/4" long, instead of l". IN A LARGE BOWL,CREAM TOGETHER TILL LIGHT AND FLUFFY: 1 1/2 cups packed brown sugar 1/2 cup shortening 1 egg STIR TOGETHER: 2 cups flour 1 teaspoon baking soda 1/2 teaspoon salt ADD FLOUR MIXTURE INTO THE SHORTENING MIXTURE, ALTERNATELY, WITH: 1 cup sour cream ADD: 1 teaspoon vanilla USING A SPOON, STIR IN: cut-up rhubarb l/2 cup chopped walnuts POUR MIXTURE INTO: greased and floured 13" X 9" baking pan SPRINKLE ON TOPPING: (first,mix topping until crumbly} 1/2 cup sugar l/4 cup chopped walnuts 1 tablespoon melted margarine/butter 1 teaspoon ground cinnamon BAKE: In preheated 350o oven, 45-50 minutes COOL, THEN CUT INTO SQUARES. This is excellent as is, or topped with a dollop of whipped cream or vanilla ice cream. September 3,1999
