...Quick and easy recipes for the bumper crop of rhubarb this year.

7" x 10" Pan (a little larger pan or aluminum foil on bottom of oven as the pan is full and apt to go over.)
4 cups Rhubarb, diced fine.
1 cup Sugar, sprinkled over rhubarb
3 oz. Strawberry Jello, sprinkled over rhubarb
2 cups Yellow Cake Mix (small Jiffy Mix or ½ of regular box of cake mix) sprinkled over the Jello
1 cup Cold Water dribbled over all
5 tbls Melted Butter dribbled over all
Bake in 350 degree oven for 1 hour
Cool for several hours or overnight.
RHUBARB LEMON PUDDING
Cut Rhubarb into 1" pieces and cook with a small amount of water and about 1/4 cup of sugar.
Heat over low heat for about 10 minutes stirring occasionally.
Stir in 1 package of Instant Lemon Pudding, cool and enjoy.
