Lobster Stew
 For Royalty

Serves 12

4 medium cooked lobsters (1/2 to 2 lb)
crush the shells and add to the stock with
2 onions, sliced
8 ribs celery
4 whole cloves
2 bay leaves
12 peppercorns
4 to 5 cups water with chicken stock
simmer for 1/2 hour
strain stock and stir in 8 tblsps butter
8 tblspns flour
add 6 cups milk (whole)
2 tablsp salt
1/2 tsp nutmeg
when smooth (boiling) add lobster cut in bite size pieces
simmer covered 5 to 8 minutes
stir in 2 cups scalded cream
