Outstanding Oatmeal Cookie Recipes

... one great recipe came from - maybe - Quaker?  The other recipe uses whole wheat flour.

POPULAR OATMEAL COOKIES

YIELDS 4 DOZEN

PREHEAT OVEN TO 350 DEGREES

1/2 LB. BUTTER (2 STICKS)

1 C. BROWN SUGAR

1/2 C. GRANULATED SUGAR (or SPLENDA)

2 EGGS

1 TSP. VANILLA

1 1/2 C. FLOUR

1 1/2 TSP. BAKING SODA

1 TSP. CINNAMON

3 C. OLD FASHIONED QUAKER OATS

1 C. RAISINS

3/4 C. WALNUTS CHOPPED (OPTIONAL)

-BEAT BUTTER UNTIL CREAMY.
-ADD EGGS & VANILLA. BEAT WELL.
-COMBINE AND ADD FLOUR, BAKING SODA, CINNAMON, AND MIX WELL.
-STIR IN OATS AND RAISINS.
-MIX WELL AGAIN UNTIL VERY WELL BLENDED.

DROP BY TABLESPOON ONTO UNGREASED COOKIE SHEET.
BAKE 10-12 MINUTES UNTIL GOLDEN BROWN.

WHOLE WHEAT OATMEAL COOKIES

YIELD: 30 COOKIES

-PREHEAT OVEN TO 350 DEGREES F (175 DEGREES C)
-GREASE COOKIE SHEETS.

1/2 C. SIFTED WHOLE WHEAT FLOUR

1/4 TSP. SALT

1/4 TSP. BAKING SODA

1/4 C. AND 2 TBSP BUTTER, SOFTENED

3/4 C. BROWN SUGAR

1/2 EGG (yes, half)

2   TBSP. WATER

1/2 TSP. VANILLA EXTRACT

1 1/2 C. OLD FASHIONED ROLLED OATS

-STIR TOGETHER WHOLE WHEAT FLOUR, SALT AND BAKING SODA;
-SET ASIDE.
-IN A MEDIUM BOWL, CREAM TOGETHER THE BUTTER AND BROWN SUGAR
 UNTIL LIGHT AND FLUFFY.
-STIR IN THE EGG, WATER AND VANILLA.
-MIX INTHE FLOUR MISTURE, THEN STIR IN THE OATS.
-DROP BY TEASPOONFULS ONTO THE PREPARED COOKIE SHEETS.
-COOKIES SHOULD BE ABOUT 2 INCHES APART.
-BAKE FOR 12 TO 15 MINUTES IN THE PREHEATED OVEN.
-REMOVE FROM BAKING SHEETS TO COOL ON WIRE RACKS.
