Bob Beshara's mother has the easiest, most delicious lentil recipe you ever tasted. With his permission, I am sharing the recipe and know that you will enjoy it again and again.

Bob's Mother's Lentil Recipe

1/2 package of lentils
1/3 cup rice
one small onion or 1/2 large one
2 cups water
oil (I use vegetable oil)

Wash lentils and drain; Add water to lentils.
Bring to boil and simmer for 10-15 minutes.
Cut up the onion into small pieces, add the oil and onion in a small fry pan and fry until brown.
Wash rice and pour over lentils.
Add the onion and oil to the lentil pan.
Add 1/2 to 3/4 cups of water and about a teaspoon of salt and bring to boil. Simmer for 20-25 minutes, stirring two or three times.
Don't let the water dry up while you are cooking.
When the rice is cooked, you know it is done. Enjoy!
