Betty's Potato Salad

At the last Stringer Meeting, I was asked to submit my favorite Potato
Salad Recipe. Well, here goes...

I take some dirty potatoes, wash and dice them while still leaving the skins on. I place them in cold water and boil them until they are fork tender, but not mushy. I drain the water and let them cool enough so that I can remove their skins. While they are cooking, I dice a stalk of celery and a small onion very, very small and have them ready to add to the potatoes. In a small bowl, I mix mayonnaise and some dill pickle juice together. I add a very small spoonful of mustard and stir it all together. I gently stir everything into the cooling and still warm potatoes.  (If my grandchildren aren't looking, I chop up a hard boiled egg and add that also.) Delish!!!
